Chefs Use Flavored Oil, Vinegar As Perfect Pairings

You’d be surprised at how good it is, says local shop owner David Burcham.

But he doesn’t mean the plastic bottle of cider vinegar in the back of the pantry.
He’s talking about the 12 year-old balsamic vinegars, flavored with such juices as strawberry, fig and black currant, that he imports from Modena, Italy.

“I think that’s when people are more shocked, when they taste the balsamics,” said Burcham, owner of Artisano’s Oils & Spices, 1101 E. 86th St.
