Abounty of Mexican mangoes is hitting the market, meaning low prices and excellent quality.
Contrary to popular opinion, color is not an indicator of ripeness in mangoes. That’s because there are so many different varieties. The best test is firmness: A firm mango is unripe. A mango that gives just a tiny bit to a squeeze in your palm is ripe. One that gives a lot is overripe.
The beauty of mangoes is their approachability, whatever their ripeness. At each stage, the combination of lemon juice and salt brings out a distinctive flavor. The same is true for the Indian spice blend garam masala or good old-fashioned chile powder.
