Oregon Cherry Growers, a grower-owned cooperative consisting of Willamette Valley and Columbia River Gorge family farmers, have launched a new innovative product: Stabilized Wild Blueberries.
The idea is that, unlike fruit currently used in frozen dairy products, Oregon Cherry Growers stabilized blueberries are infused with pure cane sugar before they are suspended in a viscous stabilizer. That gives each blueberry uniformity when added to the end product, and allows them to be added without becoming too hard when they are frozen. They were developed for use as an ingredient in dairy products and baked goods.
The process is also used with stabilized cherries.
“We’ve received a great deal of interest from companies looking for a better way to include identifiable fruit — specifically blueberries — in ice cream, among other products,” said Tim Ramsey, president and CEO of Oregon Cherry Growers. “Our research and development team is committed to creating innovative new products for our customers, and we’re thrilled to announce the availability of stabilized blueberries.”
