The resurgence of the egg as a good food has turned into an opportunity for a dairy farming couple to expand into a new venture.
Pauline Duivenvoorden and her husband Phil MacLean, owners of Headline Holsteins on Goose Arm Road, are getting into the egg producing business under the banner of Barn Fine Eggs Inc.
Duivenvoorden said that since 2000 egg consumption has increased right across Canada. In the last couple of years it has gone up by 1½ per cent per year.
She thinks the increase is partly due to the nutritional benefits of eggs.
