Introducing The Franklin Oyster

PORTSMOUTH – The season's first New Hampshire oyster is one farmed in Little Bay exclusively for the Franklin Oyster House. The official unveiling of the Franklin Oyster will take place Wednesday, April 27 at 4 p.m.

Oyster farmer Tim Henry of Bay Point Oysters approached chef Matt Louis last year about a joint venture between the restaurant, Louis and co-owner Jay McSharry.

“Tim had a new oyster farm and he needed to name it,” Louis said. “So his new oyster farm is now The Franklin. Everything coming out of that farm is only ours. It’s the Franklin oyster. ”
