Healthy, happy chickens lay better eggs.
That’s the idea behind the introduction of pasture-raised eggs to Publix stores starting April 1.
“It used to be that you would go to the grocery store and the best egg you could find was an organic egg,” explained Betsy Babcock, founder and CEO of Handsome Brook Farm. “Even organic eggs are from chickens spending their day inside a barn. They have to have access to an outside area, but that can be really limited.”
Pasture raised eggs have been available through local farms on a much smaller scale, but larger chains like Kroger and Publix are new to the product. And, for local farmers with an established customer base, the recognition of the value of eggs produced by chickens raised through this method is a huge step.
