MANKATO — Businessman Glen Taylor, working with partners from Mapleton and Pemberton, has finalized the purchase of the shuttered PM Beef processing plant in Windom.
Taylor, Mapleton farmer Jeff Ward and Greg Strobel of Pemberton purchased the assets of PM Beef, including the Windom plant that employed 260 people until its shutdown late last year. Taylor revealed to the Minneapolis Star Tribune earlier this month that he'd reached a deal to purchase the plant and intended to invest more than $20 million to convert it into a state-of-the-art pork processing plant.
In a news release Tuesday, Taylor and his partners said the plant will begin production late this year, eventually processing 4,000 to 5,000 hogs and employing 300 to 400 workers.
