FSIS Announces Updates To Raw Pork Products Exploratory Sampling Program

The Food Safety and Inspection Service (FSIS) announced that it began implementing the next phase of its Raw Pork Products Exploratory Sampling Program (RPPESP) on January 4, 2016. As part of this phase, FSIS laboratories have begun administering the program, representing a shift from the use of contract laboratories. Inspection program personnel (IPP) at establishments that produce raw pork products also have been instructed to continue sampling pork products for Salmonella. The RPPESP collects data on the presence of Salmonella, other pathogens and indicator organisms in various pork products. The project includes retail sampling and exploratory sampling at slaughter and processing establishments.
