Ode To Norway's Brown Cheese

"Brunost," or Brown Cheese, is as iconic as Norway's fjords. It's a national treasure that's eaten for breakfast, lunch, or as a late-night snack.

Traditionally, this dense cheese is made from the whey of goat's milk which is boiled for hours until most of the water has evaporated and the sugars have caramelized, which gives the cheese its distinctive brown color. Brown cheese, often called "geitost," goat cheese, is a must-try Nordic nibble. The flavor? Think salty, caramel, fudge, and peanut butter all at once.
