Caves Of Faribault Takes Home Three Awards At ACS

At this year’s American Cheese Society Judging & Competition, held July 31, 2015 in Providence, Rhode Island, Caves of Faribault® placed in the following categories:

In the Blue Mold Class, two of Faribault’s products tied for 3rd Place – AmaGorg® Gorgonzola and Verdant® Grass-Fed Blue Cheese. AmaGorg® Gorgonzola is handmade and then cave-aged for a minimum of 90 days which results in a piquant, yet sweet flavor profile that pairs well with chicken, dried fruits and nuts. Verdant® Grass-Fed Blue Cheese is a seasonal item that owes its unique flavor to lush pasture grazing. Handmade and cave-aged for over 100 days, it is deliciously sharp and creamy.

In the American-Made/International Style Class, St. Mary’s® Grass-Fed Gouda also secured a 3rd Place award. Made in Wisconsin using the milk from grass-fed cows, this Gouda is cave-aged in Faribault to develop its signature flavor – smooth, buttery sharpness with a hint of caramel.
