Marcus Lemonis has shuttered two of his underperforming Chicago-area companies and plans a revamp of another, the serial entrepreneur and TV personality told Crain's.
Sophie's Bakery, the gluten-free bakery and cafe formerly known as Rose's Bakery, closed both of its locations in Evanston and Highland Park earlier this year. The Highland Park location has been converted to a new Lemonis venture called the Simple Greek, a quick-serve Greek restaurant that's expected to open within the next week.
If business goes well in Highland Park, Lemonis plans to convert the Evanston location as well. Lemonis bought the Pittsburgh-based Simple Greek chain in 2014 after it was featured on his CNBC reality series “The Profit.” He and the company's founders rebranded the chain, formerly known as My Big Fat Greek Gyro, and tweaked the concept to be more of a Chipotle-style assembly-line model for gyros, salads and sides.
