REGINA — What makes a good cheese?

Chef Julian Bond ponders the question for a moment. “To me, it’s a cheese that makes you go ‘Wow!’ a cheese that you want to try, then go back for a second and a third piece. It’s magic!”

Taste, touch and smell the cheese, he recommends. And don’t be put off by a cheese’s terrible smell.

“That smell is nowhere near the palate,” he explained. “Get over those fears and really commit to try it. Once you get over that one hurdle that one time, the fear is broken. You’re ready for the cheese world.”
