PLYMOUTH NOTCH, Vt. – Like a sharp cheddar, Plymouth Artisan Cheese has been aged to perfection.
"The Plymouth cheese factory is the second-oldest cheese factory in the United States," says owner Jesse Werner.
It was founded in 1890 by President Calvin Coolidge's father, during a time when cheesemaking was booming in Vermont. Now, it's run by Jesse Werner.
"There was five dairy farms in the valley and they were making a surplus of milk and it was before refrigeration or trucking really. And they needed to figure out something to do with the milk to preserve it a little more," he says.
