Last year's harbingers of Mardi Gras flavor mayhem were a hamburger using king cake as a bun and a Mandeville restaurant that served crawfish king cake. This Carnival season, savory king cake seems to be dripping cheese all over the south Louisiana map.
Savory king cake is not new to baker John Caluda. He's been selling crawfish king cakes for the past 10 or so Mardi Gras seasons; he makes muffuletta ones, too. So does the Kenner-based wholesale bakery, Angelo Cartozzo's.
Since the King Cake Festival on Jan. 25, Cartozzo's has debuted three new savory flavors: Baked ham and cheese with jalapeno; bacon cheeseburger; and smoked sausage with cheese.
