Wegmans' Sushi With 'Fish Power' – Sourcing Wild Alaska Salmon

We’ve made it our goal to work only with suppliers who are as dedicated to sustainability as we are. That’s why we’ve partnered with Uoriki Fresh since 2008; even their name speaks of their commitment to seafood: it translates to “fish power.”

Uoriki Fresh is a renowned Japanese company with an 80-year history; they’re the largest single buyer at Tokyo’s world-famous Tsukiji Fish Market. It’s this special company that supplies us with our wild-caught seafood used in sushi (including the Alaska salmon in our new wild rolls). We’ve worked with them to develop some innovative ingredients (like our imitation crabstick—the first of its kind) and our “better than eel.” They also supply us with a short grain rice that’s grown by the only U.S. company ever to win consecutive taste awards in Japan. Plus, a true wasabi made from Japanese wasabi roots, and rice vinegar from a 361-year-old Japanese company.

Uoriki’s commitment to sustainability and quality is second to none. “They have the same goal of protecting our oceans,” says Carl Salamone, Wegmans Vice-President of Sustainable Seafood. “Like us, they understand it’s not an infinite resource.”
