MONROE, Wis. — Emmi Roth USA, an award-winning producer of specialty cheeses, has announced the winner of its 2014 Student Scholarship at The Culinary Institute of America (CIA). Alyssa Basham, a student in the baking and pastry program at the CIA’s Hyde Park Campus, received the $5,000 scholarship for her Sweet and Savory Surchoix Bread Pudding recipe.
The scholarship application process required students to submit an original recipe highlighting Roth® Grand Cru®, a washed rind Alpine-style cheese crafted in Wisconsin. Basham selected Roth® Grand Cru® Surchoix, an extra-aged version of the cheese, to use in her bread pudding.
“I chose Roth® Grand Cru® Surchoix because of its nutty flavor and caramel undertones,” said Basham. “The spices in the bread pudding, along with the caramel sauce complemented and intensified the natural caramel notes in the cheese. I added apples and candied walnuts to help showcase the pairing versatility of Grand Cru® Surchoix.”
Basham, who is on track to graduate in the spring of 2015, began her culinary career in high school through a vocational program. As a passionate pastry chef who loves baking wedding cakes, she aspires to one day open her own baking or pastry business.
