An award-winning Wisconsin cheese company has announced it will not be making its popular raw-milk cheese, reportedly due to uncertainy over pending FDA regulations.
Uplands Cheese broke the news about Rush Creek Reserve in an email to industry professionals Friday morning, according to Cheese Underground, a blog written by a former spokesperson for the Wisconsin Department of Agriculture.
Lead cheesemaker and co-owner Andy Hatch said he hoped the production stop would be temporary.
"Food safety officials have been unpredictable, at best, in their recent treatment of soft, raw-milk cheeses, and until our industry is given clear and consistent guidance, we are forced to stop making these cheeses," he said.
