As hundreds got a first glimpse of the Fresh Thyme Farmers Market store in Mount Prospect early Wednesday, company officials say they are still in the process of landing several more locations, including former Dominick's stores and locations.
Fresh Thyme's chief executive, Chris Sherrell, said they are working on lease agreements for sites that were used as Dominick's stores in Chicago and suburbs. Those properties are generally too large for the specialty store's model, so the company is seeking a partner, such as a gym, to split the space.
Dominick's was the Chicago area's second-largest supermarket chain when its parent company, the California-based Safeway, announced it was closing up the struggling shops at the end of 2013. Since then, some locations have been snapped up by competitors Jewel-Osco, Whole Foods and Mariano's for their own expansions.
