Six years ago, Karen Bianchi-Moreda launched Valley Ford Cheese Co. with milk from her family dairy farm. Her great-grandfather, an Italian immigrant, bought the ranch in 1918, and the family has been raising cows on the Sonoma Coast ever since.
Bianchi-Moreda wanted to create a role for herself on the ranch, so she started experimenting with cheese making.
I have written in the past about Estero Gold, Bianchi-Moreda's debut cheese modeled after a mysterious Italian cheese her grandparents always had on the sideboard. She still doesn't know what it was, but Estero Gold vaguely resembles a young Parmigiano-Reggiano.
