Paxtang soon could be known as a hub of cheese making.
By early next year, the Urban Creamery Artisan Cheese Shop is due to begin producing and selling cheese, everything from gouda to camembert as well as homemade yogurt.
Owner Vincent Ortega is converting the former Gantt's Decorating store at 3319 Derry St. next to the Paxtang Grill into the cheese making facility.
“It's all going to be homemade. It's going to be artisan,” Ortega said.
Most of the cheese will be organic and made with milk sourced from grass-fed cows so it will contain no bovine somatotropin (bST) or hormones, he said. The creamery will contain a retail store and the cheeses will be sold outside of the midstate to restaurants and cheese shops in places such as New York.
