ODEBOLT, Iowa | Terri Carstensen understands the consumer’s dilemma when they go to the meat case.
Calf crops are small. Cattle supplies are tight. Beef prices are high.
“It’s a difficult decision for people,” says Carstensen, who farms and feeds cattle with her husband, Kevin, near here in Sac County.
“The producer can’t do anything about price. What we can do is something about quality and safety.”
