D.C.-based Red Apron Butchery is now the first butcher in the country getting 100 percent of its hogs from farms with the Animal Welfare Approved (AWA) designation.
Red Apron reached the milestone earlier this year, according to the AWA organization.
All of the pork processed at Red Apron's meat processing facility in Northeast D.C. and sold at Red Apron retail locations in Merrifield and the District's Union Market is now coming from AWA producers. The organization audits and certifies farmers who adhere to high animal welfare and environmental standards.
Red Apron also sells beef and chicken and is working to the 100 percent mark on those as well, said Red Apron chef Nathan Anda.
