Heather Alcott knew in January 2011 that she wanted to bring the multilayered baumkuchen cake to Denver. But making that dream a reality would become a lesson in both international business relations and persistence.
Alcott, and her husband, Karl Moritz, then an executive with Gates Corp., were in Tokyo when she fell in love with the aroma of the cake and its symbolism.
"It's all about the layers — the layers of your life," said Alcott.
Baumkuchen — or baum cake — originated in Germany in the 14th century and was introduced to Japan in the 19th century, when the Japanese put their own touch on it. The multilayered cake is baked on a specialized rotisserie and topped with a variety of glazes or toppings.
