Acorn Spallacia (pronounced spah-LAH-chahh): dry cured pork shoulder. Very similar to prosciutto in eating experience and manner of curing. Sold by the whole shoulder, 4-9 lbs. Skin on, shoulder blade removed. Easy to slice by hand or electric slicer.
Acorn Coppa: dry cured collar rubbed with spices. Sold whole, 1-2 lbs each. Boneless and skinless. Amazing melt-in-your mouth texture.
