Red Barn 2012 World Champion Cheddar Sweeps Its Entire Category

Appleton, WI – Have you tasted the cheese that swept the entire category of Mild-Medium Clothbound Cheddar in the 2012 World Cheese Championships in Madison, Wisconsin? Wisconsin’s own Red Barn Family Farms produced the championship Red Barn Heritage Weis, a creamy, smooth old world style white cheddar with a pleasant tangy finish.  Bestowed gold, silver and bronze within its category, Red Barn Heritage Weis is distinctively sweeter than a typical cheddar and pairs well with fruit, especially pears, apples and strawberries. It has remarkable melting qualities, making delectable gourmet grilled cheese sandwiches, homemade mac and cheese, or melted on a juicy burger and accompanied by a pale ale.

Rounding out their dramatic showing at the World Cheese Championships was Red Barn’s Heritage Weis Reserve, winning both gold and silver in the Aged Bandaged Cheddar category. Aged over one year, the Heritage Reserve has a bold, nutty flavor – but not sharp – with a long complex finish. Still creamy and smooth, it pairs well with nutty or seeded crackers and a glass of red wine, like cabernet or tempranillo, or even a dark beer, like a porter or stout.  It is also a smooth melting cheese ideal for making flavorful beer and cheddar fondue.

Red Barn Family Farms’ award-winning cheddars are made in small batches at Springside Cheese Corporation in Oconto Falls, Wis., by cheesemaker Wayne Hintz. Both types are available in whole, (13 lb.), half, and quarter midget wheels, wholesale, and as individual 8 oz. random weight wedges at www.redbarnfamilyfarms.com and select retailers.
