At this time of year, my appetite spikes for fresh cheeses – ricotta, fromage blanc, cottage cheese and soft, spreadable chevres.
These milky, young cheeses aren't complex and I wouldn't be likely to put them on a cheese tray, but they perfectly complement the tomatoes, cucumbers, eggplants and peppers that dominate my table in summer.
A new favorite in this genre is the fresh goat Crottin from Vermont Butter & Cheese Co. This little rindless disk weighs just a little more than 2 ounces, so it's ideal for a couple to share.
