I was recently at Aihua, our largest international market, and was impressed with the selection of cheeses.
Cheeses from Mexico, Central America, Bulgaria, Denmark and the Middle East can all be found in Aihua's colorful coolers.
I was particularly intrigued by a cheese I've never seen before, Greenland brand Thalaga Cheese, because the ingredients specified it was made from buffalo milk. That's pretty unusual. Water buffalo milk is used to make Italian Mozzarella di Bufala, and the flavor is amazing next to cow's milk mozzarella. Only a few other buffalo milk cheeses are available at all, and all of them seem to be from Italy, and very expensive.
The Thalaga cheese was priced at an inexpensive $3.59 for an eight-ounce block. I was also intrigued by the name Greenland (marketed next to the Danish cheese, it seemed possible it was made in Greenland, which is part of the Kingdom of Denmark), because the writing on the cheese was Arabic and the small print referred to a city in Egypt.
