Everything about the new Baldinger bun bakery on St. Paul's East Side is big.
Five towering storage tanks hold flour; a two-story-tall robot places thousands of pans on a conveyor belt; dough rises in an enclosed proof box the size of a small house.
About the only thing that isn't big are the buns, which are mostly the standard-size models you find wrapped around a McDonald's hamburger.
In fact, McDonald's is a big Baldinger customer, and the chain's strong performance in recent years is one reason the Baldinger family needed to expand operations at a time when other businesses were cutting back.
