Cheese Of The Week: Widmer Cheddar

This week we approach our first true cheddar cheese — and it is an American cheddar.

I was excited to find a six-year-old cheddar from Widmer Cheese Cellars in Wisconsin at Winestyles. I was even more excited after finding Widmer is a small plant that has been operated by family members since 1922.

Joe Widmer, currently at the helm of Widmer Cheese, is still using much of the equipment with which his grandfather opened the plant 80 years ago. Grandfather clauses permit him to do this, and he has declined to expand production because new laws would force him to abandon those beloved old techniques.

I called him up to talk about his aged cheddar cheeses.
