New Master Class Series From The Cheese School Of San Francisco

The Cheese School of San Francisco is thrilled to announce its Master Class Series. These classes dive deeper into the wonderful world of cheese and are great for those ready to take their cheese knowledge to the next level with some of the best cheese educators working today.

Our Master Class Series provides cheese education and tastings on unique and specific subjects, such as:

· the chemistry of milk and science of cheesemaking

· the variety and role of rinds

· identifying flavor profiles

· terroir, the PDO and AOC

· specific cheesemaking regions and their most emblematic cheeses

Master Classes begin in January 2012 and are led by the preeminent cheese educators who are in town for The Fancy Food Show. The schedule includes Dutch Cheeses, Dutch Pastures, Irrevocable Terroir, The Enthusiast's Guide to Cheese Science, Cheese & Tea Pairing, Cheeses of the Northeast, and Unraveling the Mystery of Cheese Rinds.

Beginning in March 2012 we will offer one Master Class per month, beginning with Identifying Cheese Flavors led by Peggy Smith of Cowgirl Creamery.
