Now In Illinois, Nationally Recognized Cheese Maker Debuting New Line

Nationally recognized cheese maker Fons Smits is unveiling his newest raw-milk farmstead cheeses at the Zionsville Farmers Market on Saturdays.

Smits is the Dutchman who created the Traders Point Creamery products while he worked at the organic farm on the Northwestside from 2003 to 2009.

He's now producing new cheeses at Ludwig Farmstead Creamery in Fithian, Ill., just 13 miles west of the Indiana border.

The aged cheeses are made exclusively from day-fresh milk at the creamery. The new raw-milk cheeses are made using traditional European methods and carefully aged for two to four months.
