LOVELAND – Some big things are happening at small bakery located in Northern Colorado.
Over the past year, Canyon Bakehouse has been busy growing. In 2010 they were only serving four states, but now they deliver their line of gluten-free breads, made in a small building south of Loveland, to 35 states. And in March, King Soopers stores began to carry their products too.
Canyon Bakehouse was founded by Ed Miknevicius and Josh Skow in 2008 after the pair had a conversation at a café near the Flat Top Wildness Area about the lack of good tasting and healthy gluten-free breads. Since then, the company's success has paralleled the growing popularity of gluten-free foods.
