Cayuga Pure Organics near Ithaca, N.Y., has been one of the leaders of the local grain movement. It is also selling breads made with their grains that are baked by Orwasher’s bakery on the Upper East Side. A round whole-grain bread was the first, and Cayuga has added a longer loaf, with a braided pattern on top, called Otis Stout Bread.
It is made from three kinds of starters, including one using spent grains from Sixpoint Craft Ales in Brooklyn. This bread has a richly earthy flavor with a nice sour hint and is excellent, toasted or not, for sandwiches.
The crust is fairly soft, but 10 minutes in the oven will give it some crackle.
