A new cheese from Petaluma's Cowgirl Creamery is a newsworthy event, even when there isn't much of it.
Cowgirl's cheesemakers have spent more than a year developing and perfecting Wagon Wheel, and co-owner Peg Smith says they aren't done yet.
At 22 pounds, this aged cow's milk cheese is by far the creamery's largest to date. Most of the cheeses in its lineup – the beloved Red Hawk, Mount Tam and Pierce Point, among others – weigh well under a pound. The large format presented technical challenges, but it also allowed the creamery to price the wheel attractively because handling costs declined.
