SOUTH DAYTON, NY — Jenny McKenna has her work cut out for her. She has to fill a huge, room sized walk in cooler with cheese. Jenny is the the processing plant manager and cheese maker for Eden Valley Creamery, a new operation making organic cheese in South Dayton.
Jenna got her first taste of cheese making in college at Cornell University, she says “I did an internship at school on a dairy farm and I fell in love with cheese making.” The plant is turning out Gouda, Havarti, swiss as well as cheddar cheese curds.
For now the cheese making operation is a one person job. Jenny is the only employee at the the cheese plant and says “being the only person here, there’s plenty of things to do.”
