Chef Varies Oils, Vegetables In Search Of A Different Hanukkah Latke

When Hanukkah begins at sundown Wednesday, many cooks will fry up latkes, traditional during the eight-day Jewish holiday.

The oil in which the food is fried holds the symbolism. It represents the one-day supply of oil that lasted eight days and nights when Maccabees rededicated the temple in Jerusalem, taking it back after fighting Syrian soldiers.

Cooks sometimes look for alternative ingredients, such as different potato varieties or vegetables and toppings to mix it up.
Lori Shepard, 55, owner of Dexter-based Simply Scrumptious catering, says she does not mess with tradition but has found healthier — and tastier — alternatives with latkes that work for her.
