Texas Muscles in on Oyster Farming

Texas has a new industry. Oyster farming will be legal in Texas as of September 1 now that Gov. Greg Abbott has signed House Bill 1300 into law. The bill by Coastal Bend Rep. Todd Hunter (R-Corpus Christi), includes Texas in a growing industry that state law historically prohibited. Texas was the only coastal state in the United States that did not allow oyster farming.

Eggs That Will Hatch Into Genetically Modified Salmon Arrive in U.S.

The Atlantic salmon eggs, owned by AquAdvantage of Massachusetts, were shipped from the company’s Canadian hatchery to one in Albany, Ind. The company hopes to begin harvesting in late 2020, spokesman Dave Conley said.

Veroni Brings the First Giant Mortadella 100% Made in Italy to the US

Veroni, the Italian salumi producer famous for their giant mortadellas, is the first company to bring the largest 100% made in Italy mortadella to the United States. The mortadella is 300 kg (661 lb) in weight, 6.4 ft long and 18 inch in diameter: after having successfully passed the USDA’s meat inspection division controls, also thanks to the work of Veroni’s pool of QC specialists, the mortadella has reached Orlando to be exhibited and tasted at the International Dairy Deli Bakery Association (IDDBA) show from June 2 to June 4.

First Master Cheesemaker Certification For Colby-Jack

Bill Hanson, owner of Arena Cheese, and already a certified Master Cheesemaker of Gouda and Colby, received the first ever Colby-Jack Master Certification at the Wisconsin Cheese Industry Conference in April in Madison, WI. Arena is the same dairy plant that in 1979 invented and produced the first ever Colby-Jack. It is still made using the same recipe and traditional long-horn production.
