Americans have a growing appetite for specialty food. U.S. sales of specialty food and beverages reached $88.3 billion in 2013, a record high for the fourth year in a row and a jump of 18.4 percent since 2011.

Both Galesburg Hy-Vee locations will soon gain a handful of new gluten-free products after a local woman recently opened a gluten-free bakery in the Peoria area. Nancy Brown of Oak Run held a soft opening for Good Life Baking Company at 1104 N. Main St., East Peoria on March 3, and also received her wholesale license to provide products to grocery stores and restaurants.
