Because California produces approximately 90 percent of the nation’s avocado crop, grown on nearly 5,000 family farms, several local city and county governments have named June California Avocado Month. Legacy Foodservice Alliance Recognizes 100th Member Milestone With Guess-The-Date Contest

Creating a new type of distributor marketing and procurement group is Legacy Foodservice Alliance's credo, and adding an element of fun brings their mission statement to life. Marine Biologist's Science Is Vegas Casino Seafood

Most seafood restaurants receive fresh lobster and keep them alive in water tanks, but only the Wynn and Bellagio have a marine biologist who meticulously maintains the water to keep the crustaceans as fresh as if they were pulled from the ocean and placed on a plate with drawn butter. There are a handful of other marine biologists in Las Vegas, but most work with more traditional aquariums, such as those at Mandalay Bay, the Mirage and Caesars Palace.

It's no longer just foodies at farm markets or Whole Foods buying antibiotic-free, pasture-raised meats. Increased demand is coming from lots of big players, including Hyatt Hotels; institutional food providers such as Bon Appetit Management Co., which caters to schools and companies; and the fast-food chain Chipotle Mexican Grill. And it's changing the game.
