Northwest food processing takes a giant leap forward beginning mid-July when Mary’s Harvest Fresh Foods opens for business.  This 45,000 square foot, state of the art facility will operate a 20,000 square foot  vegetable and fruit processing room along with  hot and cold kitchens  The combined product line will offer approximately 1,350 separate SKUs.

As National Hot Dog Month approaches in July and Americans prepare to chow down on an estimated 150 million wieners on Independence Day alone, a new survey sponsored by  Applegate, the leading producer of organic and natural meats, finds that while many Americans differ in preferences for what’s on their  hot dogs, 77 percent of Americans are concerned about what’s in their hot dogs.

Farmers Note Increased Demand For Buffalo Meat

The value of bison meat sold in grocery stores, restaurants and farmers markets nationally topped $278 million in 2011, according to an economic analysis released last month by the National Bison Association. Sales jumped 15.8 percent compared to 2010.

Several Factors Influence USDA's Black-Hided Numbers

Black-hided. It’s the initial requirement for more than 80 beef brands certified by USDA. Total federally inspected fed-cattle harvest is the first number CAB packing director Clint Walenciak looks at. “The matrix of what drives total CAB pounds starts with that, and then it would be the percent that’s black-hided,” he says. “Then we apply our 10 carcass specifications to narrow that down even further, so that we’re running right at 24% today.” That number has trended upward since 2004 (see chart) to level off and settle back to 62.9% last year, an obvious majority. Yet many are surprised the percentage isn’t higher.
