Guida's has sold itself to a national co-operative of dairy farmers based in Kansas City. But the message won't have to change much, said Jim Guida, the senior family member at the company — because, he said, the dairy processor with roots that go back 126 years is not changing at all.

The cheese cave contains thousands of wheels year-round, but in the winter, more cheese leaves than enters the cave. During these months we clean and sanitize wood boards while we move the cheese around. We also take inventory and make space for the new batches that will enter the cave after April.
