Yet a hardy few remain and, here and there, more neighborhood butcher shops are springing up to cater to local chefs, a new generation of Food Network-inspired home cooks, and other assorted foodies.

A Toast To Hummus

In the last year, Americans spent close to $400 million on hummus, according to Mina Penna, brand manager for Sabra, the country's leading hummus manufacturer. If it seems like everyone is getting on the hummus bandwagon, Penna says it's still consumed in only 20 percent of American households. Salsa, on the other hand, can be found in 80 percent of households, making the growth potential for hummus enormous.
