Bakeries aren’t exactly rolling in dough, these days.
There were 30,000 stand-alone retail bakeries in the United States 35 to 40 years ago. Today, there are about 6,000, according to Paul Sapienza, vice president of operations for the Retail Bakers of America.
Sapienca said the decline in sales, and bakeries, is not necessarily because of the recession.
“It’s been happening for a long time,” he said. “It’s a sad story, but a universal one.”
The same thing is happening in Germany, the Netherlands and Ireland, he said.
