PEMBROKE — How do you sell out-of-state buyers on a cheese that isn’t part of a known classification?
When it’s Chastinet, an artisan cheese produced by Yancey’s Fancy at it’s Pembroke operation, you start with a taste.
“We sell nationwide, and with Chastinet, it has to be sampled because it’s not as well known and it’s (a cheese) that it’s all our own,” said Jodi Stahl, executive administrator at Yancey’s Fancy. “The easiest way to take it and cut (a piece).”
