The Best Milk Options May Just Be None At All

Humans are the only creatures on the planet that consume another species’ milk. Our ability to do so – that is, our lactose tolerance – is a trait that evolved over time. Humans who did have the ability to digest cow, goat and sheep milk were able to reap its nutritional benefits when hunting, gathering and agricultural products were constrained in any way.

It makes sense that this would evolve to be a benefit in hard times. In fact, several academics believe the first wheels of cheese were developed as a way for early humans to be able to consume the fats and proteins in milk without the lactose – pretty cool, huh?
